Hello. 🍞We're going big with the wholemeal test plant. I'm going to bring more whole grain recipes because diabetes has come up in the family, so now I'm spending all my time experimenting with flours and recipes to see which ones work and raise blood sugar less. 🌾Low glycemic index flours are important. These slow the absorption of carbohydrates due to their high fibre content. However, I am aware that wholemeal flours contain all parts of the grain (husk, kernel, germ), so there is a risk of contamination, with residues of pesticides and fungal toxins concentrated in the unremoved husk. I have already written a blog post on my website about this, just because the other day I was also told that TK flour should not be used... but unfortunately those who have a carbohydrate metabolism disorder have very little choice. So let's respect that, who uses what flour. I made beetroot bread the other day, I'll bring you a video tomorrow. 🩷💜 The dough is more difficult to handle, sticky, the casing is denser and the ripening process is slower. If you like the sweet, earthy taste of beetroot try it! 🥰 For a more intense skin colour you need citric or ascorbic acid, if you don't add this the skin colour will fade during baking.

Finally some sourdough video coming this weekend on my channel... sourdough sandwich bread. 🍞🥰 I usually make this bread when I remember in the morning that I need bread "immediately", it takes about 6 hours to make, folds and rising and it's ready to go in the oven. It can be sliced very thinly, deliciously milky and buttery as it should be. I bake it in the ceramic baking tin of the tescoma toast bread, I had a recipe for blackberry bread that I leavened. Baked plum wine was also made. We love it! I'll bring you the recipe video on Saturday! 🥰A must for everyone who loves fruit tea. It can be combined with any fruit, flavoured and spiced to taste. When the fruit is cooked, put it in sterile jars with the spices in the same way as a jam and put it in the same way in a dry saucepan and let it cool slowly. Allow 1-2 weeks for the flavours to meld, but you can eat it straight away. I usually put about 4 teaspoons in a mug and then pour hot water over it to make a delicious additive and preservative free tea.
As my favourite season is autumn, I love everything plum. Oven-baked plum jam is very easy to make, as the oven does most of the work. I really like to spice up the flavours with spices, so I added cinnamon, cloves and nutmeg. I didn't want to add sugar at first, but we tasted it and it was sour for us, so I added some sugar, but that's also a matter of taste.5 kg of raw fruit made almost 3 kg of jam for me, but that's also individual, how thick you leave it. The baking time is up to each individual to decide how thick they want the jam. I usually stir the jam every 30 minutes. At about the 5th stir I add the sugar and spices to taste and leave it in the oven for 1 or 2 more rounds. Our new favourite is the fluffy soft sandwich bread. 🍞 I ordered this ceramic loaf pan from tescoma, which came with a recipe that I modified and leavened slightly. Since the goal with sandwich bread is not to have a big holey crust, I don't usually let this rise in the fridge for long. I start it in the morning and have delicious fresh sandwich bread by the evening. 🥰 I'll bring you the video soon.
I make sourdough breads every week, I just don't share them all. But this time I felt like making a sample, so this one was more special.
Since I had plum dumplings for lunch yesterday, I had the idea that if I'm going to cook potatoes, I might as well make a sour potato pancake. I already had a sourdough casserole video, but this is a completely different recipe. ☀️ I like this version much better, the potatoes make the dough stickier and harder to handle, but the interior is much softer and tender.
