Santa Claus oatcakes
Gingerbread flavoured crispy oat biscuits. So that I don't just cater to leavers with recipes, this is a recipe made with baking soda.
- 250 g vaj soft
- 180 g sugar
- 2 package vanilla sugar
- 2 db Egg
- 200 g flour
- 8 g baking soda
- 200 g oatmeal
- 50 g chocolate pastille and dried fruit mix
- to taste gingerbread spice mix
- to taste cinnamon ground
- to taste cloves ground
- to taste vanilla powder
Beat the soft butter, eggs and sugars until fluffy.
In a separate bowl, measure out the flour, add the baking soda, spices, oatmeal and chocolate and dried fruit pieces. Mix together, then add the whipped butter mixture.
Shape the dough into dumplings of any size, then place them on a baking tray lined with baking paper (I use wet hands or a wet spoon). Then flatten the dumplings to a maximum thickness of 1 cm.
I bake them in a preheated oven at 170 degrees for 15 minutes on the bottom - top baking program, until golden brown (but watch out, it depends on the size of the biscuits you have shaped).
