First measure out the flour, half of it can be wholemeal flour.
Add the sourdough starter, eggs, salt to taste and enough water to make a sticky, soft, sticky dough.
Mix the dough together. If you feel it is not soft enough, add more water.
Cover and leave to rest for about 1 hour.
Bring the water to the boil, add a little salt.
Sauté in running water using a noodle sifter. As the noodles rise to the surface, remove them with a strainer and drain the water.
At the end, add oil or some kind of fat to prevent the dough from sticking together. Serve and ready to eat.
