Measure the honey into a saucepan, add the gingerbread spice mix and start heating. Add the butter and when melted, leave to cool.
In another bowl, mix the sugar with the eggs. Squeeze in the juice of an orange or lemon.
In a third bowl, measure out the flour, add the sugar and egg mixture, the leaven and the honey mixture and knead. Wrap in cellophane and refrigerate for a few hours.
On a floured surface, roll out the dough, cut it into shapes of your choice.
Bake in a preheated oven at 180 degrees for 12-15 minutes on the top and bottom baking programmes (oven dependent).
Then you can decorate. I store them in an airtight container, so they stay soft and smooth.
