As made by 3 generations. My favourite is the salted cabbage strudel, my mum used to make it all the time.

Homemade strudel stretched

We make the stretched strudel in the Vasi-Salai way, I learned it from my grandmother, now we mostly make it with my mother.

Ingredients
  

Pasta

  • 1200 g flour (BL-55 mixed with high protein flour)
  • 750 g lukewarm water (700-800 g may be possible depending on how much flour is absorbed)
  • 30 g melted fat
  • 1 tablespoon vinegar (can be omitted)
  • 1 teaspoon salt

Cabbage

  • 1 Head cabbage (medium)
  • salt
  • Fat

Cottage cheese

  • 1 kg cottage cheese
  • 2 db Egg
  • salt or sugar (depends on whether you want it salty or sweet)

Poppy-seed

  • poppy
  • chies
  • cinnamon
  • sugar

Instructions
 

  • The dough makes 3 large pans of strudel + another small pan if you reuse the scraps.
    Sift the flour. It is important that it is lump-free. Then add three quarters of the lukewarm water, again it is important that the water is lukewarm. When kneading, if the dough takes up more water, add more.
    Then add the fat, salt and vinegar (the vinegar can be omitted) and knead the dough. Use a machine or by hand, whichever you prefer. You should get a soft dough. Then I divided the dough in three halves, because I want to make three flavours and put it in a greased bowl to rest for 1-2 hours, the dough will spread nicely.
    When the time has elapsed, place a clean piece of stiff pastry on a large rectangular table, flour it lightly and roll out the dough until it is thin. (If the flour is of the right quality, the dough will not tear.) Trim off the loose edges of the dough and then re-knead the ends. Then baste the dough with melted fat and add the filling.
  • Stuffing variations are our favourites:
    Cabbage (savoury): grate the cabbage, salt to taste and fry in oil or fat. Let cool completely.
    Cottage cheese: mix the cottage cheese with 2 eggs or salt it if you want it salty. Or in the sweet version you can add grated zest of organic lemon and sugar to taste.
    Poppy seed cake (sweet): mix the poppy seeds with sugar and cinnamon and add the strawberries to taste.
  • The assembly process:
    When you have rolled out the dough, cut the edges, brush the dough with melted fat, then you can put the filling on top and we always brush the filling with well-mixed sour cream so that the strudel doesn't get dry.
    Then fold the edges up and roll up the pastry on both sides using the spreader, cut to the size of the pan and place on a greased or greased baking tray.
    We always spread the tops with well-mixed sour cream.
  • Baking:
    190 degrees for 50-60 minutes, when the top is nicely browned it's good.
