Sourdough burger bun with TangZhong

Extra soft burger buns recipe and homemade meatballs.

Ingredients
  

TangZhong

  • 42 g flour
  • 210 g milk

Zsemle

  • 100 g Strudel flour
  • 458 g Bread flour
  • 90 g milk
  • 200 g sourdough
  • 100 g natural yoghurt
  • 40 g brown sugar
  • 1 db Egg
  • 50 g Fat or oil
  • 15 g salt

Hambi sauce

  • 1/2 Head onions
  • uborka
  • jalapeno
  • mayonnaise
  • mustard
  • salt
  • pepper
  • garlic
  • red peppers

Meat patty

  • 600 g beef minced
  • 400 g pork minced
  • 5 cl oil
  • BBQ spice mix or any

Instructions
 

  • Prepare the TangZhong: Start by heating 210 g of water to 65 degrees Celsius. When it reaches this temperature, add 42 g of flour and stir continuously until you get a thick gelatinous consistency. (This takes a few minutes.) Let it cool.
  • Measure out the ingredients for the buns: the bread flour, the strudel flour, the milk, the egg, the natural yoghurt, all the tangzhong, the leaven and the brown sugar. Start kneading and after a few minutes add the fat and the brown sugar kneading the salt at the end. Punch the dough down completely and place it in a greased baking tray for 1 hour.
  • Start folding the dough: Fold the first fold in any way you like, then leave to rest for 1 hour.
  • Fold the dough a second time and let it rest for 1 hour.
  • Fold the dough for the last time, let it rest for 1 hour and then refrigerate for 10/12 hours to rise.
  • Take the dough out of the fridge and let it temper on the kitchen counter for 2 hours.
  • Divide the dough into 6 parts and roll them. I usually shape them into dumplings of about 210-215 grams. Then place on a baking tray lined with baking paper and flatten the dumplings. Cover and leave to rise for 4 hours.
  • Brush the tops with a beaten egg and leave to rise for another 1 hour.
  • When this is done, brush once more with a beaten egg and sprinkle with sesame seeds.
  • Preheat the oven to 230°C on the bottom-up baking programme.
  • When the oven is hot, put the buns in the oven to bake. Steam the oven and immediately turn the oven down from 230 degrees to 180 degrees and bake for about 30-35 minutes.
