Bodza syrup, the way I make it.

Bodzaszörp

Bodja syrup with mint and lime. This amount will make 1.4 litres of syrup.

Ingredients
  

  • 30 db elderflower
  • 1,2 l Water
  • 1 kg sugar
  • 2 db lime circled
  • 2 branch mint
  • 1 tk citric acid
  • 1/2 tk sodium benzoate

Instructions
 

  • Do not pick flowers in the opening! Use scissors to cut off the flower heads, because if you tear them, a lot of pollen will fall out! Try to pick bug-free flowers, because you shouldn't wash them, as the pollen will come out! Pick the flowers in the same pot you are going to soak them in, so there will be more pollen on the flowers too! Do not pick elderberries by the roadside, as it is important that they are free of dirt!
  • Always wash the bottles and sterilise them in some way. I usually put them in the oven at 150 degrees for half an hour. The cap should also be free of any dirt that you use to seal it!
  • We pick about 30 heads of elderflowers.
  • We make a sugar syrup: 1.2 litres of water and 1 kg of sugar, then let it cool. (Someone does this later - so many houses, so many customs.)
  • When the syrup has cooled, pour over the elderberries, dice 2 organic limes or 1 lemon and add a few sprigs of mint to taste. Cover and leave to infuse in the fridge for 3-4 days.
  • Sterilise the bottles.
  • Strain the elderberries and squeeze the moisture out of the flowers well! Put it in a saucepan to boil, adding the citric acid and preservative (sodium benzoate) if you like. Bring to the boil and pour the hot elderberry syrup into hot, sterilised jars. You can also steam it out as you used to.
