Cottage cheese tortilla chips

Tortilla chips with homemade salsa and cheese sauce.

Ingredients
  

Chips

  • 150 g Water lukewarm
  • 55 g olive oil
  • 50 g sourdough
  • 30 g cheddar cheese
  • 250 g Bread flour
  • 8 g salt

Salsa sauce

  • 1 tablespoon olive oil
  • 1/2 db onions
  • 1 gerezd garlic
  • 3 db tomatoes peeled
  • 1 db Peppers
  • 4 db small slice of jalapeno
  • 1/4 teaspoon red gold spicy
  • 1/2 teaspoon oregano
  • 1/2 teaspoon bazsalikom
  • salt
  • pepper

Cheese sauce

  • 120 g cheddar cheese reszelve
  • 1,2 dl milk
  • 1/2 tablespoon starch
  • 1/4 teaspoon garlic por
  • 1/2 teaspoon red gold spicy

Instructions
 

  • Measure out the lukewarm water, add the olive oil, sourdough starter, cheese, sieved bread flour and salt.
  • Roll out the dough.
  • Let rest in a greased baking dish for 2 hours.
  • 2 types of chip making method:
    One is to bake tortillas: divide the dough into small 25 gram balls, then roll them out into a 1 mm thin circle and fry in a lightly oiled pan for 2-2 minutes on each side. (If the bubbles come out, the dough will puff up, then good.) Then stack the baked tortillas on top of each other and use a pizza cutter to cut the dough in half, then cut them in half until all the triangles are formed. Place them on a baking tray lined with baking paper and bake in a preheated 180 degree air oven for 7-12 minutes until crispy.
  • The other method is:
    Roll out the dough into a large rectangle, also 1 mm thin, then brush with olive oil and spices (you can season it however you like here). Place them on a baking tray lined with baking paper and bake in a preheated 180 degree fan oven for 5-10 minutes until crispy.
  • Salsa sauce:
    Sauté the onion with the garlic in oil until translucent, then add the peeled tomatoes, peppers, a little jalapeno pepper and the spices. Add the olive oil and cook for about 10 minutes under the lid. Afterwards, process with a stick blender or chopper and it's ready.
  • Cheese sauce:
    Bring the milk and starch to the boil in a saucepan, stirring constantly, and as it starts to thicken add the grated cheddar cheese and seasoning. When the cheese is completely melted it's ready. (You can dilute with milk if necessary.)
